WINTER WARMER FINNISH RYE BREAD RECIPE

Freshly baked rye bread is traditionally part of a Finnish family meal, especially during the winter months. Rye bread not only encourages healthy digestion, it also helps promote an even skin tone.

Ingredients

5 cups warm water
9 cups 100% wholegrain rye flour
½-cup sourdough starter
1-tablespoon fine sea salt

Method:

1. Mix water, salt and sourdough to start.

2. Add 2/3 cup of flour first and the rest little by little.

3. Work the dough until mixed well together. The dough should hold its shape.

4. Place the dough into a bowl covered with cloth until doubled in size.

5. Divide the dough into two pieces and shape each piece into a loaf.

6. Place the loaves onto a floured wooden proofing board or sheet pan. Sprinkle flour on top and cover with cloth. Leave to proof for about an hour in a warm place until the dough has doubled in size.

7. Heat your over to 480°F.

8. Place a little cup of hot water in the oven to create steam then bake the bread on a baking stone or sheet pan for 10 minutes.

9. Lower the temperature to 355°F and bake for an hour.

10. Remove the bread from the oven and allow it to rest for a couple of hours before slicing.
